Our Favourites from the Spring/Summer 2020 Menu!

We might be still in the depths of cold, wintery mornings, but here at AlchemyLive, we’re already looking to summer.

As the season begins to turn, we look towards lighter, brighter dishes. Delicately balancing bold flavours, this new menu evokes the atmosphere of long, slow summer evenings.

We want to give all our clients the chance to taste with their eyes, so here’s a sneak peek of some of our absolute favourite dishes!


A summer’s evening should begin with light and fresh flavours, which is exactly what our Spring/Summer starters bring.

Beginning with the Trio of Salmon, featuring premium ginger and gin cured Scottish salmon, a grilled salmon fillet, and earthy beetroot tartar with soft herbs. Rich flavours are balanced perfectly with tingly wasabi crème and salty caper popcorn. Finally, to finish the dish, a perfectly poached quail egg perches atop, with some extra luxury in the form of avruga & keta caviar.

A combination of classic flavours promises to be a huge hit with your guests this Summer: Ham, Melon, Port. Be transported to long Italian summer evenings, with the perfect combination of sweet, salty, creamy and tangy. Trealy Farm parma ham begins this dish, served fresh, crisp and creamed. The fresh flavours of melon cut through, prepared fresh, sorbet, compressed and powdered. A rich port gel and burnt syrup complete the plate, the balancing act to sweet and creamy flavours.

Nothing says summer quite like a mouth-watering Tuna Ceviche; sure to be a hit for the longer, warmer evenings. Paired with a bright, fresh cucumber carpaccio and zingy yuzu and chilli granita, providing a refreshing palate cleanser across the fresh, flavourful ceviche.


Rump of Kentish Lamb is the star of the show for our first main. A red peppercorn & soft herb rub envelope the lamb with flavour, perfectly complemented by the buttery savoy cabbage bubble and squeak. Pickled and charred spring onion, sautéed baby onions and a rich port reduction finish this dish to perfection.

For a lighter option, our herb-crusted, pan-fried Salmon is a sure winner. Silky creamed potato and fresh pea puree accompany this dish, along with a tantalising crisp skin wafer and fragrant sea herbs. A delicate chive and sauvignon blanc sauce is served alongside as the finishing touch.

The two-bone lamb rack is designed for those who want a dish with some drama. Deep in colour and rich in flavour, it pairs perfectly with the smokey pulled lamb leg and Ethiopian passion berry celeriac cannelloni. Spinach and ricotta gnocchi add to the warming flavours, alongside smooth caramelised celeriac puree and delicately wilted baby spinach; with drizzles of rich lamb stock reduction and light spinach oil.


To save the best until last, we’re finishing off with our favourite desserts.

To begin, we are taking a stroll down memory lane to after-school snacks, but including some serious upgrades. Our silky-smooth Cornflake Panna Cotta serves up a whole heap of nostalgia. Served alongside crunchy chocolate-coated cornflakes and tart blackberries, with lashings of woody maple syrup.

Summer is all about bringing out the bright flavours of fresh berries: enter our Blueberry Mousse with berry textures! Accompanied by zingy mini raspberry meringues, delicately light blackberry sponge and a super sweet strawberry macaron; this is a decadent alternative to the usual chocolate affair. Finishing with blackcurrant jelly, sweet crumble and a tart gooseberry compote to cut through the sweetness, it’s a dish your guests will want to remember!

Finally, things get a bit food-lluisonist with our Chocolate Egg. Laying on a bed of mint jelly and chocolate soil, velvety white chocolate panna cotta envelopes a hidden, deliciously fruity filling. Break the shining shell to reveal the tangy mango and passion fruit gel filling, oozing from within reminiscent of a perfectly poached egg!
